Probably GTA V.. A ton of things you can do, huge maps, always new stuff to discover, if you're bored just driving around can be entertaining, a bunch of missions and side missions, the multiplayer is great as well and comes with its own stories. So multiplayer and singleplayer is like two different games.

GTA just never really gets boring.

I'd even consider Minecraft- It is fun with friends.

Just Cause 3. Although I'd get bored after completing all the missions, the game has freemode like GTA so I'll be busy all day blowing up shit and whatnot.
