Definitely the splinter cell series, with chaos theory as the best of the series.
No other series really comes close to it in a genre that is already pretty small, only other major (kind of) competitor is metal gear, which has a completely different take on it. Truly a one of a kind game.

As for a close second, the ARMA series is very unique and great to play. Offers an experience no other game can, on a scale no other game can.
